The most headache in the barbecue process is the burning of charcoal. Imagine being hungry and smoking. Do you want to pour the whole barrel of oil into the fire directly? Actually, burning charcoal is not difficult at all. As long as you know all kinds of charcoal and choose the appropriate ignition products, you can lighten charcoal easily.
I. Fruit charcoal
Fruit charcoal is the log charcoal, that is, the barbecue fuel added after log cutting through combustion, distillation and other processes. There are many types of fruit charcoal on the market, such as apple wood, litchi wood and so on. Charcoal is relatively close to the original ecology, one of the advantages is that it is easy to ignite, good quality fruit charcoal can even be ignited with a match. And the barbecue will emit a smell of firewood, plain with a little childhood memory, like the smell of fireworks at Grandma's kitchen.
Fruit charcoal also has shortcomings, that is, the burning time is not long enough, after all, it is made from raw charcoal, not as compact as machine-made charcoal.
Classification of fruit charcoal: There are basically apple charcoal, litchi charcoal and jujube charcoal on the market. In fact, these raw materials will not have any impact on the finished products. For example, the roasting of litchi charcoal will not have litchi flavor. These are just local materials, selected according to the different plant growth environment. What really affects the finished product is the manufacturing process.
I'm going out to barbecue now, basically with fruit charcoal, because ignition is really very convenient.
1. Ignition time:
It's shocking to be able to ignite a piece in a minute and leave it quiet with the rest of the charcoal. We can prepare other things by ourselves. It will take about 10 minutes to burn all of them until they are ready to bake. All you need is matches. No other combustion products are needed. The state in the picture is about 5 - 6 minutes when it's burned.
2. Burning time:
It takes about an hour to burn all of them at one time. The burning time is really a little short, but that is to say, adding one more time of charcoal does not affect the barbecue.
3. Smoke volume, heat and odor
As can be seen from the photos, there is almost no smoke, unless the grease drops into the fire when baking, which will produce a lot of smoke. There is no difference between heat and ordinary charcoal. From kindling to extinguishing, it is the smell of firewood, no other artificial ignition. It can be said to be a very good experience of a barbecue charcoal.
II. Mechanical Charcoal
What distinguishes it from the original fruit charcoal is the mechanism charcoal which now accounts for the majority of the market. If fruit charcoal is still popular among tea drinkers, then mechanical charcoal is the first choice for all types of barbecue business households, after all, it is economical and durable.
There are two common types: strip and sphere. The strip is more durable than the spherical charcoal. First, the volume of the strip is relatively larger. Second, the strip charcoal is more compact in the pressing process. However, spherical charcoal is more easily ignited, because the spherical volume is more easily surrounded by heat, and burns more fully. Strip charcoal will encounter less than half of the burnt-out situation, but spherical charcoal is basically completely burnt.
For mechanism charcoal, ignition is the most difficult problem. It is necessary to use auxiliary ignition agent. It is not only slow but also smoky and troublesome to rely on some withered grass alone. It is also a method to pour cooking oil on the charcoal to ignite in an emergency, but the open fire burns for a long time, so the barbecue can not be carried out until the fire is extinguished.
The auxiliary articles of charcoal ignition are spray gun, ignition wax, alcohol block and wax stick. Let's talk about these experiences separately.
It is of great use and can be used repeatedly. Not only can it be used to ignite charcoal, but also to make a small barbecue grill directly. Many Japanese Street scallops and oysters are heated at the bottom with this spray gun.
It can also be used for baking and barbecue coloring, with emphasis on this barbecue coloring. There is a way to make barbecue abroad, which is to first vacuum-marinate a large piece of meat, then cook it in a low-temperature cooking machine until you want to cook it, and then color it with a spray gun. This not only ensures the ripe taste of the food, but also avoids scorching on the surface.
First, ignition wax: safe and easy to use, is more expensive.
2. Alcohol block: cheap and easy to use, basically for domestic and commercial use, but the quality is a little worse.
3. Wax sticks:
Few brands have done this since they first appeared in the past two years. But it's really good and inexpensive. It's safer and safer than alcoholic drinks. First of all, he is a natural wood, healthier than wax, alcohol and other industrial products, and more suitable for household use. Secondly, it can continue to burn for about 10 minutes, and the heat is very high. I have tried to build eight long strip mechanism charcoal, as shown in the following figure:
There is only one wax stick in the middle. It takes about 15 minutes for charcoal to ignite, which is very good.
Finally, make a summary of the matching of charcoal for barbecue:
1. Mechanized charcoal (spherical/strip) +wax stick + matches
2. Machine Charcoal (Strip) +Alcohol Block/Ignition Wax + Gun
Situation 1: You buy the strip mechanism charcoal, then the safety point with a gun, because the strip pressure is more compact, not easy to ignite, need additional gun assistance, if you have enough patience, then wait a little longer. Situation 2: Buy spherical charcoal, then use ignition wax or alcohol block is enough.
3. Fruit charcoal + matches
